Cheese & Glucose Spike — What the CGM Actually Shows
Cheese gets a bad reputation. I wore a CGM and tested it directly. The result was one of my cleaner experiments.
High fat, high sodium, zero carbs — cheese sits in a strange place nutritionally. People worry about it for the wrong reasons and ignore it for the right ones.
When I ran it on my Freestyle Libre 3, the glucose curve was about as flat as I've seen. Fat and protein don't spike glucose on their own, and cheese is mostly both. The experiment is short and the result is clean — exactly what I want to see.
