Fresh vs. Day-Old Dal Rice — The Ultimate Blood Sugar Hack

I tested the same dal rice fresh out of the pot and left overnight. The glucose results were night and day — and the reason is real food science.

I'd heard the theory before: day-old rice has more resistant starch, which means a slower glucose response. I decided to actually test it on myself instead of taking someone's word for it.

The CGM difference between fresh dal rice and rice that had been refrigerated overnight was significant. This is one of the simplest zero-cost hacks in my entire experiment archive — you're making the same food, just changing when you eat it.
