Gajar ka halwa is non-negotiable at most Indian festivals and family dinners. Traditional recipes load it with ghee, sugar, and khoya — delicious, but a guaranteed glucose event.
I rebuilt it with a different structure: same carrots, same warm spice profile, but with a protein addition and a sweetener swap that keeps the curve flat. The CGM result was good enough to make this my go-to version. Watch to see how I made it.
